Rwanda is known as the “land of a thousand hills” and coffee is widely cultivated across most of those hills. Coffee is grown as a cash crop by upwards of 400000 smallholders whose farms are measured not in land area but number of trees. The average farmer has 200 trees and will sell their harvest to a local washing station. The first Central Washing Station (CWS) was built in 2001 and with strong government incentives in place that number has grown to over 300. This policy has seen an improvement in quality and added a 40% premium to the export value of Rwandan coffee.

Specifics – Dahwe Washing Station is the latest addition to the Muraho family. The station is situated in the Gisagara District, at 1630m. There are over 1400 farmers in the area with around 340 000 trees.
Dahwe Washing Station has also planted its own coffee, around 85 000 seedlings, as well as growing avocados, pineapple and having a herd of Ankole cattle.
All cherry is hand-sorted before a pre-pulp float, underripe or damaged cherry is removed, along with any foreign objects. Cherry is then floated in pre-pulping tanks removing any floaters and later pulped. Next, coffee is fermented in dedicated concrete fermentation tanks for an average of 12 hours. During this time, the fermented parchment is agitated several times through the day by way of ceremonial foot-stomping.
After fermentation, coffee is released into a large serpentine grading channel. This process also separates parchment into different density grades. During the washing process, parchment is continuously agitated to encourage lower density parchment to float and to clean any residual mucilage off the parchment.
Once the parchment is separated into grades, it is given a final post-wash rinse. At this point, coffee is taken to a pre-drying area where the parchment is hand-sorted removing any insect-damaged, discoloured or chipped coffee. The parchment is laid out to dry and turned on a regular basis throughout the day for 30 days.
