Coffee was first planted in Mexico around the early 1800s. There are now various regions growing coffee around the country. Well known ones are Chiapas, Oaxaca and Veracruz.
The country has struggled with Coffee Leaf Rust in recent years, but there is hard work afoot to grow more disease resistant Arabica Varieties, The average farm is about 1 – 5 hectares.
The washed process generally follows as such;
Coffee cherries are pulped, fermented to break down the mucilage still attached, then washed, and lastly dried in the sun on patios until the desired moisture content.
